Winemaking
Principal winemaker and viticulturalist, John Ellis, chooses to uphold the traditional methods of the premium producers in the Burgundy region, where vine density is high and crop load limited to sacrifice quantity for quality.
- 10 hectares (25 acres) of Pinot Noir
- 5 hectares (12 acres) of Chardonnay
- A number of clones used for each variety, adding subtlety and complexity
- 2m row spacing by 70cm plant spacing – 7150 plants per hectare
- Crop limit 5 tonnes per hectare – 1kg of fruit per metre
- Yield to date – 2.5 tonnes per hectare (1 tonne per acre)
- Wine matured in a combination of new and used French oak barriques for a min. of 12 months
- Pinot Noir and Chardonnay cellared after bottling for an extended period to allow further maturation
